Tomato Prawn Bruschetta

Makes 3 dozen

  • 1 lb. prawns, shelled
  • 1 lemon, zest only, cut in julienne strips
  • 1 tsp. lemon juice
  • 2 Tbsp. capers
  • 3 Tbsp. minced fresh basil
  • 4 cloves garlic, minced
  • 4 Tbsp. olive oil
  • 1 ½ cups tomatoes, seeded and diced (approximately 7 Romas)
  • Salt and black pepper to taste
  • 1 baguette or ficelle, sliced ½ thick and grilled

Instructions

  1. Blanch the prawns in 10 cups of water until they are just cooked, about 2 to 4 minutes.
  2. Place in a bowl or ice cold water to stop the cooking. Drain.
  3. When they are cool, chop the prawns into ¼ inch thick pieces.
  4. Mix together the lemon zest, lemon juice, capers, basil, garlic, olive oil and tomatoes.
  5. Season with salt and pepper.
  6. Mix in the prawns.
  7. Spoon 1-2 Tbsp. of the topping on each slice on grilled baguette.
  8. Serve Immediately.
